There’s a Little Viking in Everyone

“There’s a little Viking in everyone,” says Ancestry.com, part jokingly.Through their Ancestry DNA testing, they find a large number of people have a percentage of Scandinavian roots, some of which can be further narrowed to the Vikings.

Eastcastle Place residents, some of who may or may not boast Viking blood, have been pleasantly surprised to discover that a number of them are of Scandinavian heritage, many with roots in Norway. Always happy for an excuse to celebrate, they honored Norway Independence Day in the best way possible….through pastries.

Laura Wengler, director of community life, explained, “My background is Norwegian as are some of our residents. One of our residents told us she has a great recipe for making beautiful rosettes, which are Norwegian cookies. Another, had rosette irons passed down through his family.” As a result of the happy discovery, they baked rosettes and prepared lefse, a Norwegian flatbread. They also ordered other baked goods from Fosdahl’s Bakery in Stoughton, WI.

The goodies were offered to the entire senior living community. As residents enjoyed the treats, they discussed Norse traditions and ancestry, while wishing each other, “Happy Syttende Mai! Glad Independence Day!”
